An extremely hot and spicy concoction using the Yummy Ready to Eat noodles.

Ingredients:
1. Two packets of Yummy RTE noodles
2. Half cup Bengal gram
3. Half-cup bean sprouts
4. Half or one ghost chili, diced
5. Half a cup of boiled potatoes, diced
6. 2/3rdcup of veggies like cucumber, tomatoes
7. Two sprigs of coriander
8. Virgin olive oil or sesame oil
9. Perilla leaves or mint leaves
10. Two tbs Lemon juice
11. Salt to taste
12. Dash of pepper
13. A few licks of honey
Open the noodle packets and take out the crushed noodles, the flavoured oil and spice mix. Add in the other ingredients and mix well, and serve them on raw cabbage leaves or boiled ones. A bit of the oil can be splashed onto the finished bite.

Ingredients
1. Leftover noodles
2. 5 rice papers
3. Sesame oil
4. Cucumber slices
5. Onion slices
6. Chili slices
7. Coriander/mint
8. 2 scrambled eggs
9. Tomato slices
Wet the rice papers and place on a clean towel. Lay some of the leftover noodles in the middle of the rice paper. Add in the other ingredients as desired. Soy sauce can be added as well. Bundle up the rice paper into rolls. Rub sesame oil onto the roll. Yummy rice paper noodle rolls are ready to eat. If you would like something more crispy, just shallow fry them and you are done.

3. 2 tbs hot water
4. 2 tbs Chili oil
5. Coriander

7. Ginger, thinly julienned

9. 1 garlic clove, smashed
10. Splash of Vinegar or lemon juice
11. 2 tbs of low fat mayo
Mix in all the ingredients slowly one by one, using the ginger last to garnish the sauce. Plate out with steamed vegetables or cucumbers and the like. Eat with relish.

Ingredients:
1. Leftover noodles – half a bowl
2. Flour for dusting
3. Eggs – 2
4. Breadcrumbs – half cup
5. Cheese cubes – 2
6. Oil to fry
Cooking: Refrigerate the leftover noodles and then cut them into cubes. Dice the cheese cubes into smaller cubes and place inside the noodle cubes. Dust them with seasoned flour and then give them a beaten egg bath. Last, coat the cubes in the breadcrumbs and then deep fry them. Your tasty fried noodles cubes are ready. Use julienned onions and coriander to garnish. Eat with a spicy sauce.

Yummy noodle packets - 2
Maida - 2 cups
Flour - 1 cup
Oil - 1 tbsp
Salt to taste
Instruction – Mix the ingredients for samosa and knead the dough well. Tear out balls off the dough, and flatten them. Cut them in half and put one tablespoon of cooked room-temperature noodles inside. Press the sides with fork tines, deep fry them, and serve with spicy coriander chutney. This will be one samosa you will never get tired of eating.
